Onion soup


Ingredients:



1 tablespoon flour

5 onions

1, 5 l of broth

40 g butter

salt

pepper



How to:


Peel the poignons

Cut into thin slices

Cook the broth

In a saucepan, melt butter

Add onion rings and brown

Once cooked, powdered with flour

Continue cooking gently mixing well with a wooden spoon

Pour slowly broth

Mix well

Serve with bread and grated cheese












Vegetable soup


Ingredients:



4 potatoes

4 carrots

2 turnips

1 cauliflower

salt

pepper

1 dl cream

Poultry consumed 1,5l

2 leeks

2 onions

90 g of butter

chives



How to:


Peel the turnips, carrots, potatoes, onions

Cut into large dice

Book

Cut the leeks and onions into thin slices

Wash the cauliflower and cut into pieces

Cook the chicken consommé

Melt the butter in a pan

Add all vegetables

Mix well and cook

Cover for 10 to 15 minutes on low heat

Pour the hot broth

Salt

Pepper

Cook over low heat for 45 minutes

Add chives and the single cream

Mix

















The pea soup


Ingredients:



400 g of peas

1 onion

1 stock cube

2 small potatoes

25 g of butter



How to:


In a saucepan, add 850 g of water

The heat

Add the vegetable stock

Melt and mix well

Prepare potatoes

Peel

Cut into large pieces

Prepare onion

The peel

Cut into thin strips

In a large saucepan, melt butter

Add onion and cook over low heat, stirring constantly

Add the potato pieces

Then the broth

Cook just about 15 minutes while stirring constantly

Then cover

Add peas and cook over low heat for 10 minutes

Then mix it all

If you want more liquid add water little by little until its thickness suits you
