Ice Cream

Vanilla ice cream


Ingredients:



30 cl whole milk

20 cl cream

1 vanilla pod

4 egg yolks

90g sugar



How to:


Beat the sugar with the egg yolks

Blanch

In a saucepan, combine the milk, cream and vanilla bean cut in half and scraped

Heat up to boiling

Steep for 10 minutes and remove the pod

Pour the mixture over the egg yolks

Mix everything

No ice cream maker, put in the freezer and remove the ice from the freezer every hour for 4 hours to stir

Apricot Ice


Ingredients:



1 lemon

20 cl whole milk

500 g apricot

85g sugar

10 cl cream



How to:


Prepare the apricots

Wash, remove the stones

Mix them with the lemon juice and sugar

Add cream and milk

Mix well











The raspberry ice cream

Ingredients:



lemon juice

1 kg of raspberries

1 sachet of vanilla sugar

490 g of sugar



How to:


Make a crushed raspberries

Add lemon juice

Mix well

Add half a glass of water with the sachet vanilla sugar

In a bowl mix the sugar with a little water to make a sweet syrup

All mix

Arrange everything in a container from the refrigerator

Then let stand for 12 hours














The praline ice


Ingredients:



1 packet of vanilla sugar or vanilla pod

1 liter of whole milk

165 g of almonds

8 egg yolks

sunflower oil

440 g of sugar



How to:


In a bowl beat the egg yolks with the sugar until it foam

Boil whole milk with the vanilla sugar or vanilla pod open in half and scraped

Mix well

Pour the mixture into the first warm milk pan and mix while low heat

This should gradually form a cream

Stir constantly

In a double-bottomed saucepan make a caramel with the sugar and 2 tablespoons water

The caramel should be golden brown

Add in the chopped almonds caramel them

Let them brown

Pour the caramel on parchment paper and let cool

Then break the caramel into small pieces

Mix the cream

Mix well
